The firewood kitchen has been here since before the guests arrived.

It has not changed. The fire is still real. The smoke still rises through the same roof it always has.

What comes out of it cannot be replicated. Not in a commercial kitchen. Not anywhere.

From the fire

A few things the kitchen is known for.

Ikan Bakar

Grilled over firewood. Nothing added that doesn’t belong.

Nasi Bakar

Rice, wrapped and cooked in the same flame.

Ubi Bakar

Tapioca, from the ground. Prepared the same way it always was.

Pisang Bakar

Banana, over fire. The oldest dessert in this kitchen.

Nasi Ambeng. Gatot.
Tewol. Punten. Getuk.

Dishes that belong to a people, not a menu.

The Javanese table is not arranged for photography.
It is arranged for sharing.

Dulang Dulu Dulu

A large tray. Placed on the floor or a low table. Multiple dishes arranged together. Eaten communally.

Dulu means ‘first’ in Malay. Eat first. Everything else comes after.

This is not a gimmick. It is how this family has always eaten.

Come hungry.
Come unhurried.
